    An Early Mother's Day Treat

    For an early Mother's Day treat we went to a Champagne Tasting at Randall and Aubin, Manchester. This Salon Privée was sponsored by Moet Hennessy and featured some of the finest French Champagne. The three courses were each matched to a different Champagne, including our favourite Ruinart Brut.

    Why the Early Mother's Day Meal?

    I will be busy teaching WSET Level 2 Wines and Spirits on the big day itself. So I didn't want my Mum to miss out. This was too good to miss because it combined her two favourites-seafood and Champagne!

    A gourmet event with Chef Ed Baines & Moet Hennessy on 6th March 2018.... A champagne expert from Moet Hennessy will be on hand to talk guests through each champagne highlighting how each one is crafted and why each is the perfect accompaniment to Ed Baines's delicious menu...

    The evening started with a flute of Randall & Aubin's finest cuvée on arrival 

    • Starter: Oysters Randall or Scallop en Croûte served with Veuve Clicquot Yellow Label 
    • Main course: Hake with a crab crust, Spring vegetable, Jersey Royals with tarragon beurre blanc sauce. Served with Ruinart Brut.
    • Dessert: Peach Melba with a brandy snap tuile. Served with Veuve Clicquot Rich

  • Champagne Bureau Masterclass at Sheffield Hallam University

    The Champagne Bureau

    The CIVC (Comité Interprofessionnel du vin de Champagne) is a semi autonomous official body that looks after the interests of the thousands of Champagne vine growers and wine makers. It has several responsibilities, the most (in)famous perhaps being its fierce legal protection of Champagne’s status as a protected designation of origin product. However, much more of its work is dedicated to important factors such as innovation and world-wide education about the region’s wines.

    The have several offices (Bureaux) around the world. The UK arm kindly invites Northern Wine School to run educational workshops on their behalf to Hospitality and Business students studying at various universities in the North of the country. 

    Many of these students will be involved in hotels, bars and restaurants in their future careers. These are individuals who will go on to encounter Champagne, no matter what role in the industry they take.

    Champagne is a Unique Product

     The idea is to give students an important overview of the region, its wines and production methods to show them first hand, what makes Champagne so unique. Most importantly of all, it reinforces that Champagne can only come from Champagne, in France.

    On Monday the 12th February, John was invited to the Business and Hospitality School at Sheffield Hallam University. Right in the heart of the city, a short walk from the main train station, they are based in the Owen Building on the 12th floor. the Masterclass was to be hosted in the impressive surroundings of a room that is used to create a mock up of a real working restaurant environment. It had EPOS tills, a full bar, barista style coffee machines and a full working catering scale kitchen attached at the back.

    Attendees were able to sample the five main styles of wines as part of the presentation courtesy of The Champagne Bureau. The exact labels vary with each tasting, as they are donated by the producers. The point is to explore the region and its wines in general, rather than emphasis on specific houses’ styles. Everyone gets to taste ‘Non-Vintage’, rosé, Blanc de Blancs, Blanc de Noirs and vintage Champagnes. Attendees are guided through how they are different, the best service techniques, glassware and suggested food pairings for each.

    France is a cheese lover's heaven and the French take their cheese very seriously indeed. On any trip to France you can see market stalls groaning under the weight of a huge array of cheeses. Supermarkets have counters stretching as far as the eye can see, laden with dozens of mouthwatering varieties, every shape and size imaginable.

    Every region of France has its own particular cheeses. Over 400 at the last count and if you add in the varieties of each type, the total shoots up to nearly 1000. That's a lot of cheese! Many of the best cheeses are bound by rules and regulations which ensure that quality and traditions are upheld.

    The French treat their cheese with an astounding level of reverence, pride and care.

    The French use mainly three types of milk for their cheese, cow's, goat's and ewe's. Although one enterprising cheesemaker from Alencon is using horse milk!

    There are traditionally three main families of cheeses. Here are a few examples of the most famous and tasty types of French cheese, some of which we may be choosing for our wine and cheese tasting in Manchester:

    Pressed

    These are hard cheeses similar to the ones we have in The UK.

    • Comté-a delicious cooked cheese made in Eastern France sometimes aged for over 6 months
    • Cantal-a tasty uncooked cheese from The Auvergne mountains. Often aged to increase strength and flavour
    • Tomme des Pyrénées-a hard mild cheese with a distinctive black skin
    • Reblochon-a rich soft cheese with a strong flavour made in The Alps

    Soft

    A soft fresh cheese with a bloomy edible rind .

    • Brie de Meaux-a mild creamy cheese made to the East of Paris
    • Camembert-a soft runny cheese, from Normandy presented in a box
    • Epoisses-a strong rind washed soft cheese from Burgundy
    • Goat's cheese-fresh and spreadable with a farmyard flavour

    Blue

    A semi-soft cheese, ripened and affected by mould.

    • Roquefort-a blue cheese made from ewe's milk in The Pyrénées
    • Fourme d'Ambert-a mild cheese with a nutty flavour from The Auvergne
    • Bleu des Causses-a crumbly cow's milk cheese with a strong flavour. From The South of France
    • Bleu de Gex-a hard but mild blue cheese from the Swiss border

    This is only a small sample of the French cheeses on offer.     To gain the qualification you must pass the test at the end of the day-a multiple choice paper of 30 questions.

    Also a one day course which will give you a basic introduction to spirits. You will get an insight into the production and distillation of the major spirits of the world. It will suit the keen beginner as well as boosting the confidence of new or inexperienced front line staff in bars, hotels and restaurants.

    To gain the qualification you must pass the test at the end of the day-a multiple choice paper of 30 questions.

    WSET Level 2 Award in Wines and Spirits

    Wine tasting Manchester-WSET Level 2 wines and spirits

    This is a three day course held over successive Sundays. It will appeal to those enthusiasts who want to gain more in-depth knowledge of wines and spirits. The award will also provide a good basic grounding to anyone employed in the drinks and hospitality industries.

    The course goes into the details of how wine is made, key grape varieties and major wine producing regions. An essential part of the course is food and wine pairing, label terms and how to taste wine systematically. Currently the study of spirits and liqueurs is included in this course.

    To achieve this internationally recognised wines and spirits award, you must pass a multiple choice paper of 50 questions. This is taken at the end of the last day.

    WSET Level 2 Award in Spirits

    Wine tasting Manchester-WSET Level 2 Spirits
    A beginner to intermediate level qualification exploring spirits and liqueurs for those working in the industry or spirits enthusiasts.

    This is a three day course held over successive Sundays. It will appeal to those enthusiasts who want to gain more in-depth knowledge of spirits. The award will also provide an excellent grounding to anyone employed in the drinks and hospitality industries, especially bars, pubs and cocktail bars.

    This course covers spirits production and the tasting of spirits, including fruit, grain, sugar cane and agave spirits. You will also study and taste flavoured spirits and liqueurs. Classic cocktails and the preparing of drinks and cocktails has been included as well.

    Students will taste at least 30 spirits and liqueurs over the three weeks.

    To achieve this internationally recognised spirits award, you must pass a multiple choice paper of 50 questions. This is taken at the end of the last day.

    WSET Level 3 Award in Wines

    Wine tasting Manchester-WSET Level 3 Wines
    An advanced level qualification for professionals working in the wine industry and for wine enthusiasts.

    Normally this is a five week course consisting of five full Sundays. It is for those of you seeking deeper detailed understanding of the world of wine. The wine tasting Manchester element of this course is even more rigorous and involves tasting 50-60 wines including sparkling and fortified.

    The exam consists of a two hour theory paper of two parts. The first part is 50 multiple choice question, with the second part made up of short written answers to four questions. The written answers are worth 25 marks each. There is also a blind tasting exam of two wines.
