• Meet the Gin Makers – Four Sisters Distillery

    ​We Welcomed Lucy & Hayley last Friday ​

    Two of the famous sisters from Sis4er's Distillery, Salford came along to our packed gin tasting on November 9th. They gave an entertaining presentation about the eleven siblings and their transformation into brewers and distillers. A model of the distillery's copper still, called Arabella was on display. "Frederica" the still used to make all their gin is named after their parents ​and was specially built in Portugal.

    Strawberry Gin "Star of the Show"

    Their Strawberry Gin went down a storm as the star of the show. The guests explored the botanicals used to make  the drink and samples were passed round. The signature ingredients are blueberries, strawberries and mastiche. Then everyone enjoyed a full measure with fresh strawberries, a slice of lime and premium tonic.

    This treat was followed by the tasting of five contrasting gins with lots of mixers and garnishes to experiment with.

    A Taste of What's to Come

    Guests were given the opportunity to taste their original gin and the new Lemon and Thyme flavour. The Lemon and Thyme was really popular. The sisters also announced they have a new Passion Fruit flavour coming later this year. Unfortunately it wasn't quite ready for tasting yet.

  • First Sake Sommelier Students Graduate in Manchester

    First Sake Sommelier Students Graduate in Manchester

    Congratulations to the first group of North West students who successfully passed the “Introductory Sake Professional Course”. Northern Wine School is the first Approved Programme Provider licensed to teach this qualification in the UK, outside of London.

    John Callow DipWSET lead educator at Northern Wine School hosted this ground-breaking course.

    Many people assume that they should only drink Sake with Japanese food. I really enjoy dispelling this myth by demonstrating the drink’s amazing versatility. Sake has the ability to pair with a wide range of foods from every culture.”

    He is so committed to education in this field, that he is travelling to Japan in February next year to take the Advanced Sake Sommelier Course. This will allow him to offer more intensive sake education and become one of the most highly qualified teachers in the country. The next Manchester course is on March 8th 2019 after his return.

    Sake is in decline in Japan, so brewers are increasingly looking to international markets. Although still niche, Sake is showing impressive growth in the UK against strong competition from gin and other popular beverages. Younger drinkers are searching out more unique offerings with heritage. Sake’s versatility with food, reasonable prices in comparison to fine wines and ability to mix well in a wide range of cocktails is appealing.

    The availability of Japanese rice wine from different breweries with their variety of styles is expanding rapidly. Increasingly restaurants, prestigious wine merchants and up-market department stores, such as Selfridges and Harvey Nichols, are offering more and more product lines.

    The Sake Sommelier Association aims to promote the history, culture and traditions of this wonderful and diverse beverage around the world. They want to show that Sake compares favourably to wines and spirits and is compatible with a wide range of cuisines.

    Sake is a growing segment of the alcoholic drinks market in the UK, and the availability of different breweries and styles has never been better. Capitalising on consumers looking for something a bit different, and with an eye to heritage and quality.

    Increasingly, prestigious wine merchants and upmarket department stores like Selfridges, Harrods, Fortnum and Mason and Harvey Nichols are stocking an ever growing range. More than just Japanese restaurants are adding Sake to their lists as well.

    The Sake Sommelier Association aim to promote the history, culture and traditions of this wonderful and diverse beverage around the world. They want to show that it can match the complexities of fine wines and spirits, yet is much more versatile with a wide range of cuisines from different cultures.

  • John Appointed Judge for Glass of Bubbly Awards

    Northern Wine School's John Callow DipWSET has been appointed a judge for the prestigious Glass of Bubbly Awards 2018. Sommeliers, Chefs, Wine Writers, Master of Wines are among the other judges in London this September. We are proud that John is being asked to judge "The World's Finest Glass of Bubbly"

    Judging days are to be the 4th. and 5th. September. Last year's winner was Champagne Deutz 2010 Blanc de Blancs.

  • Announcing Sake Courses in The North West

    John Callow of Northern Wine School and the founders of The Sake Sommelier Association

    After a week of intensive study in London, John successfully passed the Certified Sake Sommelier examination. He was awarded his certificate in March ,and is now able to teach the Introductory Sake Sommelier Course.

    He has plans to hold Sake tasting events and teach students who wish to gain formal qualifications.

    Northern Wine School will be the first licensed to teach this qualification in the UK, outside London.

    I recently discovered the joys and complexity of sake, and its amazing ability to pair with a wide range of foods from every culture. Having been involved in wines and spirits education for several years adding sake to our portfolio seems a natural progression.
